We’re proud to partner with our friend Andrew Bausman to bring the best Big Green Egg recipes he knows. Today we’re looking at some delicious snacks that you can grill up and impress your friends with. Specifically we’re going to be looking at how to make spicy Jalapeño Poppers, Delicious Roasted Cauliflower, and a unique Smoked Candied Nuts.
Jalapeño Poppers
Ingredients
Jalapeño peppers
Corn Muffin Batter
Fresh Corn
Bacon bits
Your favorite cheese
Directions
Cut peppers lengthwise and remove seeds with a spoon.
Fill each to the top with corn muffin batter.
Bake at 350 for 15 minutes.
Optional: add fresh corn, bacon bits and cheese to the corn muffin mix.
Best served as a finger snack or appetizer!
Roasted Cauliflower
Ingredients
Cauliflower
Olive oil
Garlic pepper

Directions
Cut the cauliflower into 2” pieces, in a bowl coat with olive oil and liberally sprinkle with the garlic pepper seasoning.
In a square perforated pan roast at 350 for 20 minutes or until fork tender.
Do not add wood chips or chunks as this will overpower your other flavors!
Smoked Candied Nuts
Ingredients
2lb Fancy mixed nuts
2 tbsp butter
1/4 cup brown sugar
Granulated sugar
Red pepper flakes
Directions
Place your 2 pounds of fancy mixed nuts in the egg at 350 degrees with apple wood chunks (3) for 20 minutes, stirring occasionally.
During the last 5 minutes put 2 tbsp butter and ¼ cup brown sugar in a small pan in the egg stirring occasionally.
Once done mix nuts and sugar mixture and stir occasionally while the mixture cools. Dust with granulated sugar to separate.
Optional, add ground red pepper to add some heat.
